A Toast to my Morning French Toast!

 One of the challenges when moving to France that struck me the hardest was figuring out what to feed myself. I know many who would severely question this as a challenge as France is a mecca of fromage, wine, and all things divine. Unfortunately, as I would have it, it's a constant challenge after you minus all the good stuff. 

 In California I had the ability to eat what I wanted.. when I wanted it! France hasn't caught up yet to the whole 24 hours a day 7 days a week possibility- although it does hold its charm when closing doors for the afternoon sieste. Growing up in the home of motherly OCDer and fatherly ADDer does make for a more than interesting combination. I lacked the option to step in the kitchen and now that I am able to, I find myself slowly inching my way as fast as I can in the direction furthest from the stove. Once I am placed in front of it- I don't want to stay there. So, hopefully I can find some pinsperations to plant my feet and start to make myself food. {Working with a short attention span is awesome- oh, the potential!} What I find myself constantly on the hunt for is the miracle recipe which for me is something that doesn't take a lot of time, can be mistake proof, doesn't turn my hair grey in preparations or cooking, and is delicious.

 This morning when regarding Instagram I stumbled upon a highly viewed image of a woman that really knows her kitchen, Manuela- the owner of Passion for Baking, a light went off in my head. Rewind an hour or so when I was having my usual conversation with my boyfriend of what I would tackle as my breakfast/lunch. We had a really lovely (but heavy) lunch that he concocted yesterday afternoon and I knew that would not be my first option out of bed. He mentioned to me that there were eggs in the fridge - to me, I like eggs only when someone else does it. For psychological reasons that I can't explain- I will not ever be seen using an egg for breakfast. and the only time I ever use an egg is for baking purposes. I am a baker more than a cooker if you can say that.

 Anyways, so.. After looking at Manuela's post of vanilla wafer cupcakes was the light- I somehow for some ADD reason thought of French Toast. For the first morning in ever, I successfully found a recipe for something that met my qualifications. I googled "easy french toast" and chose this recipe from Allrecipes.com. It had 6 ingredients, 5 if you don't count the already assumed ingredient- bread. I wasn't scared yet. I used my brain power to concoct this recipe with my laptop on the counter right next to me if needed as not to screw it up. Threw the ingredients in a bowl and used a fork to whisk it together. My bread even cooperated with me as it was mini-size and fit completely in the bowl being able to flip it over with ease, incredible! Threw it in a pan on the stove and messed up with the timing on each side for the first four.. didn't get it together for the fifth but, oh well! It didn't taste of burn, it tasted scrumptious and fancy (for me anyways, usually its just a bowl of cereal or a grapefruit for breakfast.) Now I have one more thing to add to what I can make for myself, and I am just oh so proud!
